Some desserts marked Francisco's career and he will always cherish them. Here's Francsico's top three: an undercooked sponge cake, fluffy, delicate and moist inside, which the chef has made more than a hundred times. There's a fig tart in honey with fig leaf cream that is sweet and very soft. And then there's the semifreddo of banana, chocolate and yuzu: a competition-winning dessert!
