River Cottage Australia

Tasmanian former chef Paul West faces the challenge of setting up his own farm near the historic village of Central Tilba on New South Wales's picturesque Far South Coast.

Hugh Fearnley-Whittingstall takes his experiment in downshifting Down Under. In this episode, with Hugh back in the UK, Paul finds himself alone at River Cottage Australia, though not for long. He's about to welcome a new best friend to the farm - Digger.

With his cows, chickens and vegetables thriving, Paul decides it's time to explore the nearby coastline, where he discovers an abundant source of seafood delicacies.

With malfunctioning water tanks and no dams to rely on, Paul is suddenly faced with a farmer's worst fear: a critical shortage of water. Paul enlists the help of a local farmer to see whether they can tap an old spring.

Paul dreams of one day making River Cottage Australia self-sufficient, and he's well on the way. With his own herbs, vegetables and eggs, plus cream from Bessie the cow, he whips up his first ever `all-from-the-farm' meal.

Paul is keen to restore the gully that acts as a natural watercourse on his farm, but it's almost totally overgrown with blackberries. Paul learns that he can hire a herd deal with the problem, but will they have the appetite for such a massive job?
