Every Christmas Aunt Cátia improvises in the kitchen! This year she will cook: The traditional “sonhos”, but these are generously filled with cod cream. A pie with homemade pasta and a delicious partridge filling. And to make the table filled with sweets even more beautiful, a Christmas tree with puff pastry and custard cream with almonds.
They taste delicious, earthy and autumnal, but are often forgotten. Aunt Cátia will make three delicious dishes with asparagus. Very simple to prepare, the asparagus cream with mushrooms is velvety and elegant.
Aunt Cátia has chosen three vegetables. With spirulina she makes a pesto for a homemade tagliatelle, with broccoli a pie of portobello mushrooms and herbs, and with matcha green tea, she makes dark chocolate layered ice cream.
Aunt Cátia makes humboldt squid curry, seasoned with various spices and coconut milk. Stuffed squid with minced meat with all the flavour of sausage and garlic. And a braised hake cannelloni in tomato sauce with vegetables.
Aunt Cátia loves to shape her cooking, so she decided to prepare three wrapped starters. The first is a vegetarian sushi with rice couscous and a special avocado, lime and coriander sauce, followed by egg rolls stuffed with flour.
Aunt Cátia dedicates the following recipes to peanuts: peanut croquettes with dijon mustard sauce. Country chicken with ginguba peanuts and basmati rice sauteed in peanut oil. For dessert, peanut pudding with condensed milk and a crispy crust.
