Tess discovers after-hours shift drinks for staff, where she becomes enthralled with Simone. When Sasha recruits her to find his missing wife, Tess finds out where everyone goes after work.

Tess struggles with the three-plate carry, which leads to a romantic encounter. After meeting restaurant alumna Serena, Simone advises the impressed Tess not to believe everything she sees.
