Cajun Aces

It's the first weekend of crawfish season, so Chefs Sam and Cody Carroll need to work out the kinks on new dishes at Hot Tails and Sac-a-Lait, including Baked Crawfish Mac and Cheese and Crawfish Pot Pie.

Homecoming weekend is a big deal in New Roads, LA, and Hot Tails expects to be swamped! Pigs are aplenty and figs are in season, so Sam and Cody aim to please the crowd with dishes that make the most of these local ingredients.

Autumn in southern Louisiana has chefs Sam and Cody reinventing comfort food classics featuring turkey and pecans. Dishes include a Pecan Chocolate Cake, Buffalo Turkey Wings and Turkey Fricassee with Pecan Rice.

Sam and Cody head out to the Gulf of Mexico for some late night redfish bow hunting and plan to pair their catch with okra prepared in unexpected ways, including Cajun-style Fish and Chips and Grilled Okra with Tomato Remoulade.

Sam and Cody fry up a special menu for a Friday night fish fry complete with Thin Cut Catfish, Farmer's Caviar, Chicken Thigh and Smoked Sausage Gumbo and Fish Camp Punch.

Sam and Cody grill up a hot meal inspired by memories from when they were dating complete with Cajun Filet Marinated Beef Tenderloin, Cajun Grilled Shrimp Skewers, a Cajun pie and more.
